Elephant Cookies by Cristina Fernandez

ELEPHANT COOKIES - Makes: approx. 18-20 cookies


250g flour

125g soft butter

125g sugar

1 egg yolk (reserve the white to decorate the cookies)

1 tsp baking powder

Optional: to give more flavour to the cookies you can add 1 tsp of cinnamon powder or vanilla extract

400g of white Fondant or the colour of your choice + any additional colours to decorate the cookies


1. Preheat the oven to 180º.


2. Mix the butter together with the sugar in a large bowl until it is very creamy. Add the yolk and beat well again.


3. Add the flour and baking powder (and cinnamon). Mix and knead with your hands until you get a compact ball.


4. Flour the work surface and roll out the dough with a rolling pin. Shape the biscuits with an elephant mould (or carefully cut out with a sharp knife following a paper pattern) and put them on a baking tray. Prick the biscuits lightly with a fork. Leave to cool in the fridge for 10 minutes


5. Bake for 10min. or until corners begin to brown; let cool.


6. Roll out the fondant on a clean surface previously sprinkled with icing sugar. Cut out the shape of the elephants (a little smaller than the one on the biscuit), paint the biscuit with a little egg white and put the fondant on top, squeezing lightly and shaping the elephant; finish with any additional decor that you like. Enjoy!
