I love this time of year, with the chill in the air, crisp frosts in the morning (or squelchy mud underfoot due to the rain!) and the darker nights, but so do bugs and viruses. This soup is packed with herbs that are known for their ability to soothe your throat and unblock any chest congestion. The turmeric and black pepper work together to bring down inflammation all over your body, whilst the garlic and ginger help to fight off the presence of any bacterial or viral infections! The vegetables provide a wide range of vitamins and minerals to nourish your body back to health, plus it tastes really good.
So that’s the healthy bit, now for the ingredients with their magical properties:
1/2 tsp turmeric – purification, protection, healing, peace 1/2 tsp black pepper – protection, exorcism, jealousy, negativity, strength, confidence, gossip 1 tsp rosemary – protection, love, lust, mental powers, exorcism, purification, healing, sleep 1 tsp thyme – healing, health, peace, psychic powers, love, purification, courage, releasing, sleep, beauty 1 tsp sage – protection, wishes, wisdom, purification, stimulating, intuition, abundance, success 1 tsp basil – wealth, money, prosperity, love, exorcism, protection, happiness, peace 1 bay leaf – protection, purification, strength, power, healing, creativity, spirituality, psychic powers 3 cloves of garlic – exorcism, protection, healing, jealousy, strength 1 tsp ground ginger (you can use fresh, the amount will depend on your taste) – money, success, power, love, cleansing, protection, consecration 1/2 onion diced – passion, fertility 2 carrots chopped – clarity, fertility, passion 2 courgettes/zucchini chopped – abundance, fertility 5 large mushrooms chopped – strength, courage, magic, balance 3 medium potatoes chopped – energy, magic, grounding, prosperity, healing 1 bunch of kale – protection, prosperity, fertility, love Sea Salt (to taste) – cleansing, purification, protection
Sauté onions, garlic and ginger in a little oil until fragrant. Add mushrooms, carrots, courgettes/zucchini until soft enough to pierce with a fork. Cover all vegetables with water and bring to a boil. Add all herbs. Add potatoes, cover and allow to boil for 30 minutes. Add kale, cover and boil for 10 minutes. Salt to taste. If you want a smoother soup, blend before serving.
