Ingredients:
1½ Cups/240g gluten free flour
1 Tsp cinnamon
1 Tsp nutmeg
1 Tsp baking powder
½ Cup/175ml apple sauce
½ Cup/100g sugar
2 Tsp vanilla extract
¼ Cup/110ml oil
For the maple glaze (optional)
½ Cup/75g icing (confectioner’s) sugar
⅛ Cup/50ml maple syrup
Method:
Preheat the oven to 350 f, 180 c or gas mark 4. Grease and flour a cake pan.
In a bowl mix the apple sauce with the vanilla and the oil. Add the sugar, cinnamon and nutmeg.
Slowly incorporate the flour and the baking powder and mix until the batter is smooth.
Pour the mixture in the cake pan and take to the oven. Bake for 40 minutes or until done. You can check by sticking a thin knife in the centre. If it comes out clean, it is ready.
Remove from the oven and let it cool.
Meanwhile, if you want to glaze your cake, mix the icing (confectioner’s) sugar with the maple syrup, glaze the cake, serve and enjoy.
