My eldest son has an allotment and at the time of writing he has an abundance of courgettes which he is giving away to family and friends. I've been adding them to everything, but was still struggling to use them all, then I remembered a while ago when a friend mentioned how lovely courgette cake is! I have to say I wasn't convinced at first but did a bit of research online until I found a recipe that I was happy with.
It smelled amazing while it was cooking, but I was still a bit hesitant to try it. I was in for a lovely surprise though, it's sooo yummy :) I couldn't believe how delicious it was. All my family members who have tried it so far have loved it too, my sister even wants me to make one for her birthday. It has quickly become my favourite cake, so I thought I'd share the recipe.
200g (7 oz) grated courgette (I peeled mine as I didn't want green cake, but it’s not mentioned in the recipe) 150g (5 oz) caster sugar 125ml (4 Fl oz) vegetable oil 200g (7 oz) plain flour 1/2 tsp salt 1/2 tsp bicarbonate soda 1/4 tsp baking powder 1 tsp cinnamon 2 tsp lemon zest
Prep 15 minutes cook 45 minutes
Preheat oven to 160c/gas 3. Grease a loaf tin
In a bowl beat together the courgette, sugar, egg and oil. In a separate bowl sift together the flour, salt, bicarbonate soda and baking powder; stir in the cinnamon and lemon zest. Stir the flour mix into the courgette mix until just blended. Pour the mixture into the prepared loaf tin. Bake for 45 minutes or until a knife or skewer inserted in the centre comes out clean. Remove from the oven and cool for about 10 minutes before turning out onto a wire rack to cool completely. Once cool I mixed together icing sugar and lemon juice and drizzled it over the top of the cake.
