
Gypsy's Beltane Cake by Gypsy Willowmoon
Preheat oven 180c/350f/Gas 4
Ingredients:
350ml/12fl.oz - milk
100g/4oz - butter
100g/4oz - oats
400g/14oz -soft dark brown sugar
2 eggs beaten
1 tsp vanilla extract
200g/7oz white plain flour (all purpose)
1tsp baking soda
1tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
Method:
In a saucepan, heat milk gently with oats, butter and 1/2 tsp salt.
Stir and cook until mixture thickens, then leave to cool to room temperature.
Stir in eggs, and vanilla extract. Add flour, baking soda, spices and sugar, mix well.
Grease a 22x 33cm/9x13” baking tray .
Bake for 30 mins, leave to cool.
After cooking. cake should be wrapped tightly until ready to eat - I use a fresh tea towel.
